Cookie crust (
Pate Sucree) baked with a layer of frangipane. Just before serving, spread an optional thin layer of pastry cream and arrange the fruit: raspberries, kiwi, oranges, blueberries. (Could have used grapes too.) Brush with melted apricot jam.
Frangipane:
1/2 cup ground almonds
1/4 cup granulated sugar
1 egg
3 tablespoons butter, softened
3/4 teaspoon vanilla extract
1 tablespoon all-purpose flour
